No Eggs, No Dairy, No Sugar 100 Years Old Date Nut Cake Recipe

I found this book on a garage sale about 15 years ago. It was a book of favourite family recipes, lovingly submitted by the members of Michigan WSCS Methodist Church. Of course, I could not resist buying it.
Here is one of my favourite cake recipes from this book. I adjusted it a bit by reducing the amount of sugar from 1 cup, as the original recipe called for, to 1/4 cup, and increasing the amount of dates instead. You may skip sugar at all, if you wish. Dates give enough sweetness to the cake.

 

DATE NUT CAKE

 
1/4 c brown sugar                                                                                                                                                                                    1 c boiling water
2 Tbs lard ( or the same amount of ghee)                                                                                                                                          1 tsp baking soda
1 tsp vanilla                                                                                                                                                                                               1 1/2 c flour
1/2 cup chopped nut meats                                                                                                                                                                     1 1/3 cup chopped dates
dash of salt
Pour boiling water over dates, nuts ans soda. Let it sit for an hour or so. Mash mixture with a spoon.
Mix sugar, lard, vanilla, salt. Add mixture to dates and nuts pure.
Add flour last. Beat well.
Bake in 350F oven for 35 min.
